Recipe: Pasta e Fagioli with Black Eyed Peas

Feel free to add sausage, carrots, onions, whatever you enjoy.

8 ounces ditalini pasta (or whole wheat elbow)
2 tablespoons olive oil
6 cloves garlic, chopped
8 ounce can tomato sauce
1 cup water
15 ounce can of black eyed peas or favorite beans such as Cannellini
Salt and freshly ground black pepper to taste

Optional Toppings:

grated Parmesan cheese
fresh parsley, chopped
hot red pepper flakes

Cook pasta according to package instructions. Meanwhile, in a medium sauce pan heat olive oil. Add chopped garlic and cook until golden brown. Add tomato sauce and 1 cup of water, entire can of black eyed peas (or beans) and simmer for 10 minutes. Season with salt and pepper. Drain pasta and add to bean mixture. Serve immediately in bowls with cheese, parsley and red pepper flakes if desired.
