Goat Cheese and Spinach Frittata Pairing 4/8
This Saturday we’ll be tasting the Domaine Bernard Defaix Petit Chablis (2015) from Burgundy’s Chablis region produced by a fourth generation family of vine-growers. These traditional winemakers practice a mix of organic, biodynamic and classic farming methods, adopting from each philosophy what works best for their vineyards and harvest the grapes at maturity to reflect the personality of the soil.
Crisp and vibrant with green apple and stone fruit notes , the wine is characterized by its freshness with minerality conveyed by the noble Chardonnay grape grown in the stony soil of the flatter grounds of Chablis. Wines from this appellation are an excellent value for money. 2015 was a Golden Vintage year that yielded great complexity and concentration of fruit aromas plus perfect balance (Thanks The Winebow Group!)
